Creamsickle Cake

Cake:
  • 1 orange cake mix
  • 1 small box orange Jell-O
  • 3/4 cup boiling water
  • 3/4 cup cold water

Icing:

  • 1 box Cool Whip (8 oz.)
  • 1 small box vanilla pudding
  • 1 cup milk
  • 1 tsp. vanilla
  • 1 tsp. orange extract

Cookies, Cakes & Desserts

Bake cake per directions on box.  Remove from oven.  Poke holes in the cake 1 inch apart.  Then let cake cool.  Mix orange Jell-O, boiling water and cold water.  Cool Jell-O slightly and pour over cake.  

Mix Cool Whip, pudding, milk, vanilla and orange extract.  Beat together and spread over cake.  Store in refrigerator.

Reduced-Fat Chocolate Cheesecake
  • 3/4 cup graham cracker crumbs
  • 1/4 cup sugar
  • 3 (8 oz.) package fat-free cream cheese, softened
  • 1/3 cup unsweetened cocoa
  • 3 Tbsp. flour
  • 3 egg whites
  • 1 (14 oz. can low-fat sweetened condensed milk
  • 1 egg
  • 1/4 cup semi-sweet chocolate chips
  • 1 1/2 tsp. vanilla extract
Chocolate Cheesecake
Preheat oven to 350 degrees.  Spray bottom of 9-inch spring form pan with cooking spray.  Combine crumbs and sugar; sprinkle on bottom of pan evenly.  In mixer bowl, beat cheese until fluffy.  Mix in cocoa and flour.  Add remaining ingredients; mix well.  Pour into prepared pan.  Bake 40 to 50 minutes or until center is set.  Cool; chill
