Di Roma's Chicken Neapolitan |
|
- 2 boneless, chicken breasts, cut into
large bite sized pieces
- 2 Tbsp salad oil
- 1 clove garlic, crushed
- 1 Tbsp. chopped parsley
- 1/2 tsp. oregano
- 2 oz/ canned sliced mushrooms, well
drained, or 4 fresh mushrooms sliced and precooked
- 1/4 lb. butter, cut into 4 or 5 pieces
- salt and pepper to taste

| Fry chicken in oil
over medium heat until light brown. Discard all grease and add
garlic and parsley. Continue heating a minute or 2 linger to pick up
parsley and garlic flavors. Remove from heat. Add spices,
mushrooms and butter pieces. Return to heat to cream all ingredients
together. If butter separates, remove from heat; add a teaspoon of
water and continue creaming. Serves 4. |

Shrimp & Sausage Rice
Preparation
Time: 5 Minutes; Cook Time: 30 Minutes |

- 1/4 lb. raw shrimp, shelled and deveined
- 1/2 lb hot Italian sausage, sliced /4
inch thick
- 1 (14 1/2 oz.) can Del Monte fresh cut
brand diced tomatoes with garlic and onion
- 1 1/4 cup chicken broth
- 1 cup uncooked long grain white rice
- 1 (15 1/4 oz.) can Del Monte fresh cut
sweet peas, drained

Brown sausage in large skillet; drain.
Add tomatoes, broth and rice; bring to boil. Cover and simmer 25
minutes, adding peas and shrimp during last 8 minutes. Garnish with
sliced green onion, if desired. Makes 4 servings.
Try cubed chicken instead of shrimp and add
with tomatoes, broth and rice. |
